Step up to 6m x 3m when you need a serving counter plus working space behind it, a seating area, or two distinct zones such as sampling and sales. There are also 2m and 4.5m widths for narrow pitches and awkward frontages where a square footprint will not fit. Check your pitch allocation before ordering, because organisers rarely allow a structure to overhang the marked bay.

More than most people order. The roof panels carry the largest area and are what people see from across a field, while the valance around the lower edge of the roof sits at eye level and does the real selling. A printed peak flag adds height above the roofline, and leg covers and corner banners fill the vertical space that otherwise looks blank in photographs. If the budget only stretches so far, print the valance first — it is the part closest to the customer.

A rain cutter is a fabric strip fitted at the roof edge to control where water leaves the canopy, so it drains in a chosen line instead of sheeting off onto whoever is standing at the front. Anyone trading with an open front in British weather will want one, because the alternative is a permanent drip curtain across your serving hatch. It also helps when two gazebos are pitched side by side and water would otherwise collect in the valley between them. Pair it with a tent ceiling if you want the inside to look finished as well as stay dry.

The frame is what you will still be using in five years, so check the leg profile, the locking mechanism at each height setting, and the joints where the scissor sections pivot. Heavy-duty frames are heavier to carry precisely because there is more material at those joints, and that is the trade-off worth making if you trade most weekends rather than twice a year. Look closely at how the roof attaches, since the corner fixings and straps are what tend to fail first in wind. The 3m x 3m, 4.5m x 3m and 6m x 3m food-service versions are arranged for serving through a hatch rather than working with a fully open front, which changes how the walls and counter line sit. That matters for queue management and for keeping the public on the right side of hot equipment. It also makes it far easier to answer an organiser or environmental health officer asking how the public is separated from your preparation area. Plan where the counter goes first, then choose the layout that supports it.

Use the template for your exact size, because a roof is made from triangular or trapezoidal panels and artwork designed as a flat rectangle will not land where you expect. Keep logos centred within each panel and away from the seams and the peak, where the shape of the fabric pulls the design out of true. Remember a roof is never seen flat — it is viewed at an angle from below, so type needs to be larger than it looks on screen. The dye-sublimated print is durable, but two things age a gazebo: UV on the roof and being packed away wet. The roof takes far more sun than any other part of your kit, so expect the top surface to soften in colour before the valance does. Always dry the fabric fully before it goes into the bag, and store it separately from the frame so metal parts do not mark it. Check the roof seams at the end of each season, while there is still time to sort a replacement before the next one starts.
